Cool weather always makes me crave soups and stews. They are hearty, healthy and warm you up. Kale is by far my green of choice for soups since it is so healthy and it doesn’t get slimy the way that spinach does. This soup is a favorite of mine. Easy, fast and healthy, it’s perfect for a weeknight dinner. Add a salad and some bread and you have a great meal.
Spicy Sausage, White Bean and Kale Soup
Sweet Italian Sausage
Canned, Chopped Tomatoes
Kale, Torn into Bite-Size Pieces
1. Remove sausage from casings and cook over medium heat, breaking it up into small pieces. Cook until no longer pink.
2. Add onion, garlic and chili flakes. Cook until onion is golden and translucent.
3. Add tomatoes, white beans, and broth. Cover and simmer on low for 20 minutes.
4. Add kale and lemon zest. Cook a few more minutes until kale is wilted. Season with salt and pepper to taste.
5. Serve with parmesan.
