Egg Salad-ish

IMG_2191I’m all about the quick meals these days.  Between long days at school, homework to come home to, and a kitchen that currently has only one (yes, one) cooking utensil, I can’t seem to muster more than that.  Yet I still manage to eat healthy, tasty food.  This was a last minute, late-night improve and I have to say it came out well.  I served it with one of those famous French baguettes with some cheese and butter.  Bon appétit!

Egg Salad-ish

2 Eggs

Chives, chopped

1/2 lemon

Olive Oil

Arugula or Rocket (handful)

Salt and pepper


1.  Bring a saucepan with water to a boil.  Add the eggs and boil gently for 7 minutes.  Remove and let cool.

2.  In the meantime, wash the arugula and dress it with olive oil and lemon juice to taste.

3.  In a bowl mash the eggs with the chives, lemon juice, olive oil and salt and pepper.  Taste and adjust seasoning.

4.  Top arugula with egg mixtures.  Voila, dinner is served.
