Coconut Oatmeal with Cinnamon, Dates and Walnuts

IMG_2233I love oatmeal.  There is something so nice about a warm breakfast on a cold winter day.  It warms me up and gets me ready to face the cold.  Oatmeal is not very common in Paris and I had to search for awhile before finding a bag of organic rolled oats.  I decided to make a hearty breakfast with coconut milk for some added protein and fat.  The result was delicious, filling and hearty.  What is your favorite way to prepare oatmeal?

Coconut Oatmeal with Cinnamon, Dates and Walnuts

1 cup rolled oats

1 cup coconut milk

1 cup water

1/2 teaspoon cinnamon

pinch of salt

1 tablespoon of honey

8 dates, chopped

handful of walnuts, chopped

1.  Combine the rolled oats, coconut milk, water, salt and cinnamon in a small saucepan.  Simmer over medium-low heat until oats are cooked through, about 10-15 minutes.

2.  Add honey and stir to combine.

3.  Serve with dates and walnuts.
