Bacon, Spinach and Sriracha Fried Rice with Currants and Mozzarella

IMG_2743I never intended this to be a blog post.  This is one of those meals that is thrown together to use up the random ingredients you have in your fridge and pantry.  It was meant to be hearty, filling and quick but nothing special.  Instead, it was one of the best meals I had all week.  The saltiness of the bacon and the creaminess of the cheese pair perfectly with the currants.  It might sound like an odd combination but give it a chance.  Trust me, it’s worth it!

Bacon, Spinach and Sriracha Fried Rice with Currants and Mozzarella

2 cups cooked rice

1 bag spinach, lightly steamed and chopped

3 slices bacon, cut into strips

1/3 cup currants

1 ball of buffalo mozzarella*, drained and cut into small cubes

1 tsp olive oil

Sriracha

 

1.  Heat the olive oil in a large skillet.  Add the bacon and cook until browned.

2.  Add the rice, currants, and the spinach.  Cook stirring until rice starts to brown.

3.  Add sriracha to taste.  This depends on your heat tolerance and is up to you.  I added a big ‘chug’ from the bottle.

4.  Sautee a minute more until warmed.  Season to taste with salt and/or pepper.

 

*Buffalo mozzarella is made from the milk of water buffalo.  It is different from the mozzarella that you often times see which is made from cows milk.  It’s much creamer, has a lighter consistency, and packs a lot more flavor.  Seek it out.  It makes a big difference!
