You may have noticed that I’ve been a bit silent lately. I am in the middle of finals for school and all my energy at the moment is focused on passing my classes. C’mon financial markets! I promise to be back with some good posts soon. In the meantime, here are a few of my favorite things:
The soba noodles with mango and eggplant from Ottolenghi’s Plenty cookbook. AMAZING! I added tofu for protein and am planning to make this again this week. I think it will become a staple of mine. It would be great with grilled shrimp or Vietnamese caramelized pork chops.
