When I started this blog, I did not imagine that I would be posting about omelets. I was back in my pre-MBA life. I had time to cook elaborate meals, a kitchen that could support me and plenty of space to entertain. Fast forward to my life in Paris and everything has changed. I am insanely busy even in the evening, I have a teeny tiny Parisian kitchen and no space to have people over. When I meet up with friends we go out to eat. I cook for myself most weeknights squeezing this beloved activity in-between management accounting and strategy homework. So I write about omelets. I write about meals that are sustaining, healthy, tasty and fast. I write about what I eat and I remember that sometimes simplicity is best.
I never intended this to be a blog post. This is one of those meals that is thrown together to use up the random ingredients you have in your fridge and pantry. It was meant to be hearty, filling and quick but nothing special. Instead, it was one of the best meals I had all week. The saltiness of the bacon and the creaminess of the cheese pair perfectly with the currants. It might sound like an odd combination but give it a chance. Trust me, it’s worth it!
When I have a really busy schedule, I make a giant pot of soup that I can then reheat during the week for a quick and healthy meal. This is one of those soups. I love the combination of the sweetness from the sweet potatoes and the earthiness of the lentils. By adding in some greens, I have a super nutritious, hearty, one-pot meal.
